Why 80%?


80% - er

I'm 80% vegan.  That's probably a little lower than I really am.  Most weeks I eat 90-100% vegan.  So why do I call myself an 80%-er?  The short answers are allergies and outings.  I have a few food allergies that make it hard for me to eat out (which I do every once in a while with friends).   A vegan dish many times contains nuts, avocados, soy, or carrots.  Sure, I can pick out these items, but sometimes these ingredients can't be picked out.  Sometimes, the vegan options are cooked with meat or dairy and I cannot control that either.  One vegan blog I read recommended eating vegetarian if you have no other options when you are out.  I have more dietary problems consuming diary than I do fish for example.  So my alternatives are to opt for a meal that's healthy with a lot veggies on the side.

Why is this important for you???  If you are starting a vegan journey, decide on what percent of your diet that you want to be vegan or you want to contain a lot of fruits and vegetables.  Increase that percent every week.  If you are a 100%-er, great. Remember the journey to complete veganism can be a challenge so encourage others and be supportive.  Eating healthier should not be hard.  It can be, but it shouldn't be.

Coming soon







The beginning - juicing



Like many of you who start a health journey, I began with juicing and it was fun.  But then I loved coming up with new ways to incorporate vegetables and fruit into my diet so I started eating that instead, more on that later.

Juice
2 granny smith apples
10 stalks of kale
8 ribs of celery
4 mini cucumbers
splash of lemon juice
